    Butchering Gear

    Victorinox and Swibo make damn fine boning knives, I'd hazard a guess and say you'll find either or both in 99% of butcher shops. I still have my first Swibo from when I did my butchers apprenticeship over 30 years ago. I found an old I.B. Wilson knife from the mid 1800's a couple of years ago with a metal detector here on the gold fields. For something that has been laying on the ground for over a 100 years it has a wicked edge. Made of Sheer Steel, from what I understand is the same sort of process used for making the original Samurai swords, ie: continuous folding of the steel. Last year I found a humongous meat cleaver also made by I.B. Wilson but dating from the late 1800's to the early 1900's. Neither knife has the timber handles, long since rotted away but I'll get them fitting new ones one day. Both worth refurbishing.
  3. Thanks or the welcome fellas! Seems to be no viable market for the camels or the horses Mick. It's a shame, what a waste of a resource. A few years ago it was different but I'm not sure what happened, too much red tape I think.
  4. Hi Coily, Thanks for the welcome. No shooting of the cattle here, even the big scrubbers are money, if they can get them into the yards that is. Camels, horses and wild dogs are the target out here. Cheers!
