Just after options on a general hunting knife, I will mainly be using it on foxes and rabbits for now so only looking at something budget to get started. Also I know theres pros and cons of fixed vs folding blades what are your opinions/experiences.

Plus what kind of sharpeners do you recommend stick vs stone?

A fan of fixed knifes these days, you won't need anything very big for foxes and rabbits say a 3-4 inch blade would be heaps? Disclaimer I do carry a Havalon folding scalpel knife in the pack as back up, those things are awesome look into them (they take a replaceable scalpel blade and are scary sharp, I have damn near broken down a Sambar with one).

For sharpening the Lansky system is pretty good but a good stone used well will do just as well.

I'd go with a smallish fixed blade. I've never used a folder for hunting - just my preference.

Another vote for the lansky system for sharpening and either a small steel or very fine diamond sharpener for touching it up in the field.

Wow they do look pretty great and would most definitely be a fantastic backup because of the replacement blades.
The Lansky system does look pretty ideal as it would give u a constant edge thats always the same.

Another big yes for the Lansky system, also there is a really good instructional video on you tube of how to use it by Aaron Gough a custom knife maker in the states, worth watching if you haven't used it before or even worth watching if you trying to decide weather to by it.

I have just started carrying a Spyderco Pacific Salt instead of a fixed blade Gerber. I only hunt pigs and so only require the knife every now and then to remove a jaw. I like the corrosion resistance, it's nice and lite, I don't even know it is there, does the job I need it to.

I've been using a Nirey sharpener and diamond steel/normal steel depending where I am and how bad the blade is.

I carry a buck skinner in my pack , sharpened with the lansky system , awesome edge , knife as hard  as a goats head , good all round knife . Can do a sambar in the field with out a touch up , but also carry a havalon for the more detailed work

I have collected quite a few knives over the years while pursuing the best hunting knife, which as we know varies on what the game and task is. My Favorite knife for small game is the Mercator k55 a favorite of the possum trappers in NZ there are cheaper copies around and some of them are quite good I even have a couple of those as well in my collection, but the original has a blade made of good quality steel and doesn't loosen on the pivot over time and stays tight over the years folds to a small package. I highly recommend them.

+1 what Len suggests. One of the Graf boys skinning and breaking down a deer carcass with a Mercater.

I use this folding skinning knife with a gut hook. I find when butchering in the field I'm not really stabbing or apply sideways pressure on the blade besides the initial piercing of the skin. The majority of the cuts are slices with a finger along the back of the blade like a caveman with a flint. The gut hook I have found to be quite good and worth having. If I'm not butchering it just stays in the pack. I recently bought one of the Benchmade Hidden Canyon fixed blade skinning knives and leave it on the should strap of my pack as I like the idea of having something to grab at in a pickle but lets be honest this is hunting, not combat and it will probably just sit there and look cool. I use a cheap pocket diamond steel for sharpening. It's $15. I took the plates off it and discarded the rest and they slip into a little pocket in the pack. The diamonds wear of fairly quickly but its cheap and replaceable and they take more material off than a standard steel so you can put a new edge on with it if you are desperate.
