  1. Butch You're not wrong! I snatched it at 32 myself - same reasons. Have a good job now that will probably see me through. I have got back into butchering recently just to keep my hand in, but it like riding a bike, a bit wobbly at first, but unfortunately it doesn't seem to change much from shop to shop. Most of these new guys coming through haven't got much of a clue either! (although if you talk to the guys that taught us they probably felt the same) but supermarkets have a lot to blame for this. cheers, JL. (apologies to all as I digress from main topic )
  2. butch little bear stones are not bad. thats all i've had; gone through only three in 20 years!! and I used to use it all the time until I got lazy and just stopped sharpening them (I quit butchering and went elsewhere). I also only trust one person to sharpen my knives - after having a bad experience and having a brand new slicer ruined by an "expert" sharpener. JL
  3. also an ex-butcher..... remember when using your steel to keep thumb on same side as fingers, this will help protect thumb if you accidentally slip!!! (seen some good "slips" over the years!) i also found window cleaner and the like good for whetting stone without clogging it up too much.. cheers, JL
