Skull
Cold Steel Trail Master Have had this knife (picture taken from website not my actual knife) for many years now, it is scalpel blade sharp with a nice heavy blade and it can hack through flesh and bone like butter. I have a heap of other knives and machete etc but this one is my favourite, followed closely by Muela Hunting knife & Carbon Steel Kukri

Tikka270
For skinning i use a Havalon Piranta-edge this thing is crazy sharp. It's Perfect for de-boning and skinning. The Piranta-Edge features surgically-sharp replaceable blades and an easy-to-find blaze orange handle. It's always sharp - just replace the blades and go! Each knife includes 12 additional stainless steel #60XT blades. The overall length of the knife open is 7-1/4". You'll like the easy-grip black rubber inlay, liner-lock construction and pocket clip. It's "The Sharpest Knife You'll Never Lose!" Edited July 5, 2010 by Tikka270

I've got a Buck knife like your second one here. It's a drop point blade and I have issues trying to pierce the skin to get it started. Does the gut hook help with that? I just find that it's not quite pointy enough for that first puncture through the skin. How do you start it? Jase

Jase i slice i don't try and stabe the skin i never use the point of the knife unless i am sticking a pig. however i would find it abit harder to slice the skin without the gut hook cause i like to come from the inside out. gryphon
I grabbed Rono`s Piranta to do some work on that little stag he shot recently ferk! bang, broke the blade on the first go,threw it to the shite house and reached into my pack for my Green River skinner..with the appropriate words added. I carry a scalpel but its for doing some of the finer work around the head skin, skinning knives are made for skinning scalpel blades arent,at least not for the big animals that is. A two hand grip and an upward thrust will split through the brisket so as to access the organs on the meat animals much easier too.
